| S T O R Y | a méthode champenoise sparkling wine, our cuvée is full of complexity, freshness and elegance. the fruit for this wine is always the first pick of the season, with generous fruit ripeness and high acidity to retain freshness and develop complexity. this is a special wine, yet don't let that restrain you from opening a bottle whenever the charm of sparkling takes your fancy. if you know farmer ben, you may have witnessed his favourite party trick- sabrage.
| S T Y L E | hand harvested, gently pressed to tank for cold settling. chardonnay and pinot juices were co-fermented in stainless steel. the base wine was sent to john frazer for tirage and after 13 months on lees it was disgorged with 0.75g/L dosage.
| W I N E | white flower, lemon curd, honeysuckle, salt spray with fine beading and a crisp finish. delicious autolytic characters including crushed cashews and scotch finger biscuits.
